These Banana Flax Sourdough Muffins are the perfect way to start your morning. Delicious with a hot cup of coffee and one of my favorite breakfast muffins to give to my littles when they wake up. This recipe is a family favorite, the kids go crazy over these! I hope you enjoy them!

Ingredients you’ll need for Banana Flax Sourdough Muffins:
- bananas
- eggs
- avocado oil or coconut oil
- pure maple syrup
- sourdough discard
- vanilla extract
- all-purpose flour
- ground flax meal (optional)
- fine sea salt
- baking powder
- baking soda
- cinnamon
- Optional Adds in
- mini chocolate chips
- walnuts
- pecans
Our Favorite Muffin Add-Ins
These banana flax muffins are the perfect base for your favorite add ins. They have great flavor completely plain – which is usually how I serve them to any little tot around or under a year old. We recently started using mini chocolate chips in some of our recipes and the kids go crazy over them. I honestly do too, they give a little chocolate flavor that is spread throughout the muffin and not too overwhelming. I’m not a big fan of large chunks of chocolate in muffins which is why I like the minis. (I do, however, love large decadent puddles of chocolate in cookies, that just makes sense!!) Another great add in for these muffins are toasted walnuts or pecans. My husband only likes banana flavored things when it’s combined with walnuts. I don’t blame him, the pairing is so good. We often do half mini chocolate chips, half walnuts. I like to toast the nuts for a few minutes in the preheating oven to get that yummy toasty flavor.

How to store and reheat leftover muffins?
Store any leftover muffins in an air-tight container or ziplock bag at room temperature for up to 3 days. I recommend reheating them in the oven at 350°F for 4 to 5 minutes before enjoying.

Banana Flax Sourdough Muffins (Perfect with Coffee & for Littles)
Ingredients
Wet Ingredients:
- 2 ripe bananas smashed
- 2 eggs
- 1/2 cup butter, avocado oil or coconut oil
- 1/2 cup pure maple syrup
- 1/2 cup sourdough discard
- 1 teaspoon vanilla extract
Dry Ingredients:
- 1 1/4 cups all- purpose flour
- 1/4 cup ground flax meal or sub for flour
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
Optional Adds in
- 1/2 cup mini chocolate chips
- 1/2 cup toasted & chopped walnuts
- 1/2 cup toasted & chopped pecans
Instructions
- Preheat oven to 375°F. Line a muffin pan. My favorite muffin liners are linked in the blog post above! If adding walnuts or pecans, toast them in the oven while it preheats for 5 to 8 minutes.
- Whisk all the wet ingredients together in a medium bowl (2 ripe bananas smashed, 2 eggs, 1/2 cup avocado oil, 1/2 cup pure maple syrup, 1/2 cup sourdough discard, 1 teaspoon vanilla extract).
- Mix all the dry ingredients together in a small bowl (1 1/4 cups flour, 1/4 cup ground flax meal or flour, 1/2 teaspoon fine sea salt, 1/2 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon cinnamon).
- Pour the dry ingredients into the wet mixture, gently mix to combine. When only a few dry streaks of flour remain, stir in chocolate chips or nuts if using.
- Spoon the batter into the prepared muffin tin, filling each about 3/4th of the way full.
- Bake at 375°F for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
