The simplicity & joy of a popsicle in summer

A few weeks ago, I wanted to make a healthy, refreshing treat for my son’s birthday party that everybody could enjoy. I started making a big sheet cake and glanced over at the massive box of peaches I had just picked up…. I gotta use some of those peaches, I thought. What’s easy, quick, refreshing and sure to get the kids (and me) excited?

POPSICLES. Peach Popsicles. Perfect.

Some of my most favorite snacks or meals have simply happened due to the reality of being rushed to make something quick & having to use what I already have at home. Having a plan is helpful, but these spontaneous times in the kitchen are what keep drawing me back to the kitchen.

These peach popsicles are so simple and so delicious. Of course, there’s a time and place for more intentioanl, decadent, involved desserts like cakes, cookies, pies or even a peach galette! (planning to make & share one soon!) But, it wasn’t the time for such a dessert. It was hot, the peaches were ripe & that popsicle mold in the cabinet was beggin’ for some attention.

I had a feeling the popsicles would be a hit at the party, but woah! Even the adults were ever so thankful for a cold treat on that hot summer day. There’s something so nostalgic about a cold popsicle for a lot of folks including myself. It’s the perfect way to kick the heat while still enjoying the hot summer air. I think everybody feels a bit more at home when they’re handed a cold, fresh, homemade popsicle. It really is the little things that make the best memories. Ingredients you’ll need for fresh peach popsicles:

  • You’ll need some fresh peaches. Look for some locally or see if there’s anywhere close-by that sources peaches directly from a farmer. Freshly picked peaches have such good flavor!! I have gotten delicious peaches this season from S.E. Daughtery & Sons Farm & Bulk Natural Foods. Two of my favorite places to source seasonal, quality produce.
  • Freshly squeezed lemon juice

Recipe Tips

My Favorite Popsicle Mold

You’ll need a popsicle mold to make these! I’ve tried many over the years, this one has worked the best for me. The silicone material makes it super easy to get the popsicles out after they’ve frozen. I love that this mold comes with plenty of wooden sticks that can be thrown away after eating and sealable bags so you can pack individual popsicles to go in a cooler anytime you want!

Freshly-Picked Peach Popsicles

Equipment

  • Popsicle mold, see notes

Ingredients  

  • 10-12 peaches
  • juice of one lemon

Instructions 

  1. Roughly chop peaches and add to a blender. Juice one lemon & add fresh juice to the blender. Blend together!
  2. Pour into popsicles mold and freeze 4-6 hours or until frozen solid. Enjoy!

Notes

  1. Sizing will depend on your popsicle mold. Average 1 peach per popsicle. 
  2. My favorite popsicle mold is linked in blog post above. If your popsicle mold only holds 6-8 popsicles, half the recipe above.
  3. If you have leftover blended peach, use it in a smoothie!
